Easy Marshmallow Recipe
✨ Ingredients
3 envelopes unflavored gelatin (about 2 ½ tablespoons)
1 cup cold water (divided)
1 ½ cups granulated sugar
1 cup light corn syrup
¼ teaspoon salt
1 tablespoon pure vanilla extract
Powdered sugar (for dusting)

Prep your pan
Lightly grease a 9x13” baking dish and dust it with powdered sugar. You can line it with parchment paper for easy removal later.Bloom the gelatin
In a large mixing bowl (stand mixer if you have one), add ½ cup cold water. Sprinkle gelatin evenly over the top. Let it sit while you make the syrup.Make the sugar syrup
In a saucepan over medium heat, combine the remaining ½ cup water, sugar, corn syrup, and salt. Stir gently until sugar dissolves. Raise the heat and bring to a boil without stirring. Heat until the mixture reaches 240°F on a candy thermometer (soft-ball stage).Whip it good!
Slowly pour the hot syrup into the gelatin mixture while the mixer runs on low. Once it’s all in, increase to high speed and beat for 10–12 minutes until it’s thick, glossy, and tripled in volume. Add the vanilla during the last minute.Pour and set
Quickly spread the marshmallow mixture into your prepared pan. Use a greased spatula to smooth it out. Let it sit uncovered at room temperature for at least 6 hours or overnight.Cut & dust
Dust the top with more powdered sugar. Flip it out onto a board, slice into squares (or use cookie cutters!), and coat all sides with powdered sugar to prevent sticking.
