Easy Marshmallow Recipe

Fluffy, Fun, and Perfect for Disney-Inspired Treat Nights! Have you ever made marshmallows from scratch? Let me tell you—it’s easier than it sounds and way more magical than the store-bought kind. These homemade marshmallows are soft, pillowy, and just sweet enough. Whether you’re dipping them in cocoa during a Disney+ sing-along or pairing them with a Mickey mug for cozy kitchen vibes, this is a must-try recipe!

๐Ÿช„ Bonus points if you use Mickey-shaped molds or pastel food coloring for extra castle charm!

✨ Ingredients

  • 3 envelopes unflavored gelatin (about 2 ½ tablespoons)

  • 1 cup cold water (divided)

  • 1 ½ cups granulated sugar

  • 1 cup light corn syrup

  • ¼ teaspoon salt

  • 1 tablespoon pure vanilla extract

  • Powdered sugar (for dusting)

✨ Directions

  • Prep your pan
Lightly grease a 9x13” baking dish and dust it with powdered sugar. You can line it with parchment paper for easy removal later.

  • Bloom the gelatin
In a large mixing bowl (stand mixer if you have one), add ½ cup cold water. Sprinkle gelatin evenly over the top. Let it sit while you make the syrup.

  • Make the sugar syrup
In a saucepan over medium heat, combine the remaining ½ cup water, sugar, corn syrup, and salt. Stir gently until sugar dissolves. Raise the heat and bring to a boil without stirring. Heat until the mixture reaches 240°F on a candy thermometer (soft-ball stage).

  • Whip it good!
Slowly pour the hot syrup into the gelatin mixture while the mixer runs on low. Once it’s all in, increase to high speed and beat for 10–12 minutes until it’s thick, glossy, and tripled in volume. Add the vanilla during the last minute.

  • Pour and set
Quickly spread the marshmallow mixture into your prepared pan. Use a greased spatula to smooth it out. Let it sit uncovered at room temperature for at least 6 hours or overnight.

  • Cut & dust
Dust the top with more powdered sugar. Flip it out onto a board, slice into squares (or use cookie cutters!), and coat all sides with powdered sugar to prevent sticking.

✨ Magical Serving Ideas

  • Dip in melted chocolate and sprinkle with Mickey-shaped sprinkles

  • Float in your favorite hot cocoa while watching Frozen

  • Toast over the stove for indoor s’mores nights

  • Add to a Princess-themed dessert board for your next cozy planner session

✨ Set The Mood

Put on your "Castle Cafรฉ Vibes" playlist, stream a Disney movie, or tune into Disney Sing-Alongs on Disney+ while you create. Light a candle and make it a whole dreamy experience.
