Easy Blackcurrant Yogurt Popsicles – Summer Snack Magic

Looking for a refreshing summer treat? These Blackcurrant Greek Yogurt Popsicles are tangy, creamy, and ridiculously easy to make. I used small red plastic Solo cups as my DIY molds and they turned out adorable!

You can totally use your favorite popsicle molds or even little paper Dixie cups — this is a "use what you have" kind of recipe. Perfect for hot afternoons, poolside snacks, or a fun frozen treat after a park day. 

Ingredients:

  • 1 cup blackcurrants (fresh or thawed from frozen)

  • 2–3 tablespoons honey or maple syrup (to taste)

  • 1 teaspoon lemon juice (optional, for brightness)

  • 1½ cups plain Greek yogurt (or vanilla for extra sweetness)

Instructions:

  1. Prep the fruit: In a small bowl, mash your blackcurrants with honey (or maple syrup) and lemon juice until juicy and slightly broken down. You can blend it if you want it smooth!

  2. Mix it up: Swirl the fruit mixture into the Greek yogurt. You can fully mix it for an even color or leave it swirled for that pretty marbled effect.

  3. Pour into molds: Scoop the mixture into your molds — Solo cups, popsicle molds, or Dixie cups all work great.

  4. Add the sticks: Insert popsicle sticks into the center of each cup. If using cups, cover with foil and poke the stick through to help them stand up straight.

  5. Freeze: Freeze for at least 4–6 hours, or until solid.

  6. Unmold and enjoy: Run the cups briefly under warm water to release the popsicles. Enjoy right away or store in freezer bags for later!

Tips:

  • Add a splash of vanilla extract or a spoonful of jam if your blackcurrants are extra tart.

  • Want it dairy-free? Try using coconut or oat milk yogurt!

  • Try layering the fruit and yogurt separately for a two-tone look.
